Description

• Limestone paste is used in many forms of cooking, not only Thai food but in various bakery and fried foods worldwide. For Thai food, lime paste is used to make slaked lime water (shown lower left). This water mix will allow fried foods to become extra crispy.
• Calcium oxide treated with plenty of pure water in a controlled environment (slaking of lime) produces calcium hydroxide or edible lime, also called pickling lime or choona/choonam, commonly used in paan. It is also utilised in the production of the sweetmeat called petha.

This quicklime further reacts violently with water and yields slaked lime (calcium hydroxide) a white amorphous powder. However, slaked lime is very sparingly soluble in water, resulting in a white paste. It is this 'lime-paste' which is used in the preparation of paan beeda.
